Healthy Hawai'i Coalition Loves VegFest Oahu

About 6,000 people attended VegFest Oahu 2017 which is a wonderful indication that there is lots of excitement for eating healthier foods. We enjoyed talking story and sharing information with everyone that stopped by our booth. We look forward to being part of this exciting event each year.

Some people who came by our booth asked for Carol Gabbard's vegan cookie recipe. These are delicious, simple, and dairy and egg-free. The recipe is below. Enjoy!

Vegan Lunchbox Chocolate Chip Cookies

Makes 2 dozen

1/3 cup unsweetened applesauce
1/3 cup almond butter
1/2 cup cane sugar (or any dry sweetener, e.g. maple or date sugar)
1Tbsp ground flaxseeds
2 tsp vanilla extract
1 1/3 cups oat flour (if you don’t have on hand but have some rolled oats/oatmeal, just grind up in a blender to make the flour)
1/2 tsp baking soda
1/2 tsp salt
1/4 cup whole wheat pastry flour or sorghum flour
1/2 cup grain-sweetened chocolate chips
1/2 cup chopped walnuts (optional)

Preheat the oven to 350 degrees.
Line two cookies sheets with parchment paper or spray lightly with oil spray
In a large bowl, use a strong fork to beat together the applesauce, almond butter, dry sweetener and flaxseeds. Once relatively smooth, mix in the vanilla.
Add in the oat flour, baking soda and salt and mix well.
Add the whole wheat pastry or sorghum flour and chocolate chips and nuts (if using) and mix well
Drop spoonfuls of batter onto the prepared baking sheets in about 11/2 Tbsp scoops, about 2 inches apart. Flatten the cookies a bit, so they resemble thick discs.
They won’t spread that much during baking.
Bake for 8-10 minutes. The longer you bake them, the crisper they will be.
Remove the cookies from the oven and let them cool on the sheets for 5 minutes and them transfer to a cooling rack to cool completely.
